Four things that hold for every mushroom

Most disappointing mushroom dishes come down to the same handful of mistakes.

Never rinse them

Gourmet mushrooms soak up water like a sponge, and a waterlogged mushroom steams instead of browning. Wipe with a damp cloth or kitchen paper.

Start in a dry pan

Drive the moisture off before any fat goes in. Oil added too early just gets absorbed, and you end up with a greasy mushroom that never colours.

Do not crowd the pan

Mushrooms release a lot of water. Too many at once and they poach in their own liquid. Cook in batches and give each piece room.

Salt at the end

Salt pulls water out, so season once the mushrooms have browned. Butter, garlic and a splash of soy go in at the same late stage.
